BJ's White Cheddar Mashed Potatoes Recipe

Ingredients
- 2 large russet potatoes
- 1 cup shredded white cheddar cheese
- ¾ cup heavy cream
- ¼ cup butter
- ½ teaspoon salt
- 1/8 teaspoon cracked black pepper
Directions
- Peel and quarter potatoes. Boil potatoes in 6 to 8 cups of water in a pot or large saucepan for 30 to 40 minutes or until soft. Strain potatoes, then add them back to the pan and mash thoroughly.
- Add cheese, cream, butter, salt, and pepper and heat over medium/low heat, stirring often, until thick.
Serves 4 as a side dish.
